Cuprum Distillery

Cuprum Distillery began as a shed located in the regional city of Bunbury, Western Australia with the aim of creating craft, small batch spirits such as Gin, Whisky, Rum and a series of liqueurs.

Owners Mike Honeybell and Stewart Binnie renovated the building and designed the distillery themselves by using natural materials along with recycled steel and copper. Together, with Stewarts son Rory, the building has been transformed into a craft distillery with an old school whisky bar vibe.

Copper stills are renowned as the finest method for producing excellent spirits. This is how we devised the name ‘Cuprum Distillery’ with Cuprum being the Latin word for copper, and CU is the chemical element for copper and 29 is the atomic number (hence our logo features CU29)

To get a deeper understanding of copper and to create the finest spirits, Cuprum Distillery engaged a local artisan to hand craft each and every one of our copper Alembic stills.

Their passion for using local products has been heightened by the region they live in. Cuprum Distillery is situated in Bunbury, Western Australia, known as the city of three waters – the rumbling surf of the Indian Ocean to the west, the calm waters of Koombana Bay and the tranquil Leschenault Inlet, all steeped in a rich pioneer and nautical history.

Their spirits are finely crafted harnessing the pure clean waters of the region and abundant native botanicals, using their beautiful rural isolation set on the shore of the Indian ocean and protected by the hills and valleys of the region instilling a strong sense of the best the region can offer to our distillation.
